Cat Spring Vineyard

Diving Deeper-   This wine  has many complex layers.  We hand harvested these grapes in Austin County and pressed at the winery. This wine needs to open and is best decanted.

​

Black Spanish, also known as Lenoir, is one of the few grapes that are able to grow in the gulf coast region due to pierces disease with the high humidity levels. Did you know that this grape helped save the European wine industry.

​

Out of all our wines, this is the one we hold closest to our hearts.  We hand picked these grapes from right down the street at our mentor, the Colonel Jim Brooks, Cat Spring Vineyards.  The Colonel has spent countless hours helping us plant our own grapes, design and put up a trellis, and yearly helping us pick, press, and turn Austin County Grapes into great wine.  Jim Brooks went from being an Army Colonel and protecting our country, to a huge player in the Gulf Coast Grapes when it comes to passing on knowledge and providing some of the best grapes in the Gulf Coast region.  He continues to inspire and teach us daily.

Chocolate Scuffins
  • 3/4 cup all-purpose flour 

  • 1/3 cup cocoa powder 

  • 1 teaspoon baking powder 

  • 1/4 teaspoon baking soda 

  • 1/8 teaspoon kosher salt 

  • 1/2 cup coconut oil, at room temperature 

  • 1/2 cup granulated sugar 

  • 1 large egg 

  • 1/2 teaspoon vanilla extract 

  • 3/4 cup whole milk 

  • 1/3 cup milk chocolate chips 

  • Confectioners' sugar for dusting 

Heat oven to 350* and spray mini muffin tin.  Whisk together all dry ingredients besides sugar.  In another bowl mix coconut oil and sugar.  Mix in egg and vanilla.  Whisk in the milk followed by the flour mixture until just incorporated.  Stir in the chocolate chip and spoon into the muffin tin.  Bake for 15 minutes and then sprinkle on confectioners' sugar.
