Stuffed Eggplant
  • 1/4 sweet onion
  • 1/2 c The Mark
from Cast Iron Winery​​
  • 1 Egg plant
  • pinch salt
  • pinch pepper
  • 1 T minced garlic
  • 1/3 c mozerella
  • 5 Ritz Crackers
  • 3 T parmeseam
  • fresh basil
  • 3 cooked bacon chopped
  • 1/4 c marinara
Cut an eggplant in half and scoop out the inside  down to a 1/4 inch thickness. Put in the oven at 400* for 20 minutes. Meanwhile, Saute in olive oil onions, and garlic. Add the scooped eggplant until cooked through.  Sprinkle in spices and add wine. Simmer until reduced by half. Add marinara. Take of the heat and stir in the mozzarella.
Stuff the shell and bake at 400* for 15 minutes. Combine parmesean, ritz and cooked bacon cumbles and cook for another 5 minutes util the cheese is golden and bubbling. top with basil.
